Mix all ingredients together and enjoy! I often sprinkle toasted sesame seeds over this salad. It is very tasty and also adds additional calcium!
Bring one cup of quinoa (make sure you rinse the quinoa before cooking) with two cups of water to a boil. Cover and simmer on low heat for 20 minutes. Let it cool down.Cut desired vegetables in small cubes and mix into quinoa. I most often use zucchini, red peppers, yellow peppers, broccoli, and purple cabbage. Add one small chopped glove of garlic and my Easy and Delicious Salad Dressing. Mix and Enjoy!
Steam broccoli until slightly tender. Add all the ingredients to broccoli, stir and enjoy!
