Broccoli Salad with Toasted Sunflower Seeds

3 heads of broccoli cut into small crowns
½ red onion chopped small
¼ cup toasted sunflower seeds
6 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
3 tbsp Bragg’s amino acids  
Sea Salt to Taste

Quinoa, one of the few plant-based complete protein foods, which provide the body with ALL nine of the essential amino acids.

Fresh Salads

Lentil Salad

Mix all ingredients together and enjoy! I often sprinkle toasted sesame seeds over this salad.  It is very tasty and also adds additional calcium!

2 cups of cooked beluga lentils
½ cup of small chopped carrots
½ cup of small chopped zucchini
½ cup of small chopped cabbage

Quinoa Vegetable Salad

Bring one cup of quinoa (make sure you rinse the quinoa before cooking) with two cups of water to a boil.  Cover and simmer on low heat for 20 minutes.  Let it cool down.Cut desired vegetables in small cubes and mix into quinoa.  I most often use zucchini, red peppers, yellow peppers, broccoli, and purple cabbage. Add one small chopped glove of garlic and my Easy and Delicious Salad Dressing.  Mix and Enjoy!

Steam broccoli until slightly tender.  Add all the ingredients to broccoli, stir and enjoy!
